Domaine Simon Bize et Fils Savigny-les-Beaune Blanc 2021 is an elegant dry white wine from Burgundy, from the renowned Savigny-les-Beaune region and made predominantly from Chardonnay grapes. Domaine Simon Bize et Fils, located in Savigny-les-Beaune, is a Burgundy winery that specializes in the production of wines from the Pinot Noir and Chardonnay grape varieties. Its portfolio includes a variety of village and premier cru wines, as well as Bourgogne Blanc and Rouge, Aloxe-Corton and prestigious grand crus such as Corton-Charlemagne and Latriciéres Chambertin. Currently, the vineyard properties of the estate cover 22 hectares.

Founded in 1880 with the acquisition of several vineyard plots, Domaine Simon Bize et Fils began labeling and bottling its own wines from 1950. Patrick Bize, representing the fourth generation, joined the estate in 1972 at just 20 years old. , and took the reins in the 1980s, developing new winemaking facilities, expanding wineries and acquiring more vineyards. Today, the farm remains family owned and run by his wife and sister.

Chardonnay fermentation is carried out using wild yeasts from both the vineyard and the winery. Malolactic fermentation occurs naturally in barrels, followed by aging in barrels that can last up to 9 months, depending on the vintage and the designation of origin.
