In the glass, it displays an intense cherry color with vibrant violet reflections, bright and very clear, a reflection of its youth. On the nose, it unfolds intense aromas of red fruit compote, accompanied by delicate lactic nuances from the second fermentation. On the palate, it is ample and fleshy, with a subtle touch of sweetness that gives way to a dry finish. Its fine, still-youthful tannins and perfectly integrated acidity provide balance, freshness, and a pleasant persistence.

Diecisiete Once Tintilla is a dry red wine made with Tintilla de Rota grapes by the Albariza de la Torre winery in Cádiz. The secret of this wine lies in a production method inspired by carbonic maceration, a technique that enhances the fruity expression of the variety and provides a fresh, juicy, and distinctive profile.

The grapes, sourced from the Balbaína vineyard in Jerez de la Frontera, are carefully placed into stainless steel tanks without being crushed or pressed. Intracellular fermentation begins naturally and is supplemented by the addition of small amounts of wine every one or two days. Once this process is complete, fermentation finishes in a separate stainless steel tank. After fermentation, the wine remains in stainless steel tanks for two months before bottling, preserving all the freshness and aromatic intensity of the Tintilla de Rota grape.

With its fruity and balanced character, it's an excellent accompaniment to grilled meats, especially those cooked over vine shoots. It's recommended to serve it between 12 and 14 °C.
