Domaine Bouard-Bonnefoy Chassagne-Montrachet 2023 es un vino blanco seco elaborado exclusivamente con Chardonnay en uno de los enclaves más prestigiosos de Borgoña. El Domaine Bouard-Bonnefoy, una bodega familiar con cuatro generaciones de historia, cultiva alrededor de 5 hectáreas de viñedos, principalmente en Chassagne-Montrachet, aunque también cuenta con parcelas en Saint-Aubin y Puligny-Montrachet.

Como auténticos viticultores-artesanos, la familia se ocupa de cada etapa del proceso: desde el cuidado del viñedo y la vendimia manual hasta la vinificación y comercialización. Su producción es limitada, con unas 25.000 botellas anuales, lo que garantiza un trabajo minucioso y una calidad constante. Con la intención de obtener uvas excepcionales, el dominio trabaja sus parcelas de forma tradicional: arado para evitar herbicidas, agricultura sostenible y cosecha manual.

Este vino procede de 0,13 hectáreas de la AOC Chassagne-Montrachet, repartidas en dos parcelas jóvenes, a las que se suma una tercera, plantada en 2011, cercana a media hectárea. Los suelos arcillo-calcáreos y la poda Guyot simple contribuyen a la expresión fresca y mineral del Chardonnay. La crianza tiene lugar de forma natural en barricas de roble, permitiendo una evolución equilibrada y elegante.
